Steaks with Blue Cheese and Roasted Vegetables
Blue cheese works really well with beef steaks and make a quick supper dish that is packed full of flavour. In this recipe we use a fruity chutney with the cheese and serve the steaks with sweet roasted seasonal vegetables.

Ingredients
- 2 lean flat iron, rump, sirloin, or picanha steaks
- 1 tablespoon rapeseed or olive oil
- 25g blue cheese, e.g Stilton, crumbled
- 1 tablespoon fruit chutney of your choice
- For the Roasted Vegetables:
- 1 medium sweet potato, peeled and cut into wedges
- 2 small beetroots, peeled and cut into wedges
- 1 onion, peeled and cut into wedges
- 1 tablespoon rapeseed or olive oil
Method
- Preheat the oven to 200°C, 180°C, Fan, Gas Mark 6.
- To prepare the roasted vegetables; place the vegetables on a baking tray, season, drizzle with the oil and roast for 30-35 minutes.
- Meanwhile, heat the remaining oil in a non-stick pan. Season the steaks and cook according to your preference Rare -2 minutes on each side, Medium Rare - 3-4 minutes on each side, Medium - 5-7 minutes on each side. For best results cooking flat iron steaks to well-done is not recommended.
- Spoon the roasted vegetables onto each plate. Add the steaks and drizzle any meat juices from the pan over the steak.
- Serve immediately.
